The Plum Pudding gelato is now available for Christmas & Christmas in July.  In development now is second-cultured Lemon-Coconut Gelato.  Looking forward to that one!

How do we do it?

IT'S ALIVE, yummy, and great for your tummy!

Kefir is the living culture that converts the ingredients into a unique organic food that contains over billion CFU's (Colony Forming Units) of 44+ bacteria, enzymes and good yeasts (not the Candida kind). There is a heap of scientific research on the myriad benefits of kefir, primarily to digestion and immunity. (Most yoghurts have only a few probiotics, any benefits reduced by added sugar!)

AND it's low-GI.

Vanilla Bean

  • Kefir cultured coconut cream (NOT from a can)
  • Natural sweeteners - non-GMO birch sugar & vegetable glycerin
  • Dietary fibre

We use both terms: gelato and ice cream - it doesn't matter what term you use.  Though we do honour classic gelato proportions - without using dairy &sugarcane.  Traditionally gelato is silkier and softer and is served at a lower temperature, with less sugar, fat and air.  

Gelato needs 'sugar' in large quantities, or else it wouldn't be gelato. Sugar makes it possible to scoop directly from the freezer. We only use natural sweeteners called 'sugar alcohols' (which have no alcohol as such) and have walked the tightrope between sweetness and scoop-ability - all without the additives found in commercial ice creams. And with no insulin spikes.

And it's PRE biotic! Dietary fibre enables good bacteria to stick to the bowel wall and also helps to stimulate probiotic growth.

Think of this gelato as 'food as medicine'.  It is full of good bacteria, digestive enzymes and good yeasts; all of which will make you feel better. Hi! I'm Janelle McInerney, founder and director of The Cultured Ice Cream Company.

I am an Eco-Entrepreneur with an abiding interest in the well-being of others. My master baker stepfather taught me how to cook.  We also shared a passion for making ice cream. For years I pondered how to make a dairy-free ice cream, as I was dairy intolerant.

I started working with fermented foods after a corporate and TAFE career, and forays into Civil Marriage Celebrancy and Kinesiology.  One Christmas I was asked by my bestie, "How do I make Coconut Yoghurt at home?"  She knew I would figure it out.

But why would you make yoghurt when you could make kefir!  

Soon after,  I realised that my homemade coconut cream kefir was the key to making a great coconut ice cream.   Off I went to 'Gelato University' to be taught by Nick Palumbo, Mr Gelatissimo himself. Most coconut ice creams do not honour a strict gelato formula. Mine does. That is why it is the BEST TASTING coconut gelato around.
